Street Noodles | Vietnam

This is just one of many street noodle variations you might find on any street corner in Vietnam.  This dish was enjoyed at a street stall in Ho Chi Minh City, which is to say it was eaten on a tiny little stool about five inches off the ground next to the chaotic traffic and excessive exhaust of the busy Ho Chi Minh streets.  Your typical street noodle dish is made with a curly egg noodle, lots of bok choy, sometimes egg and then meat of your choice, the noodles pictured are made with pork.  You are free to add your own chilies, chili sauce, garlic, pepper, soy sauce and whatever else they may provide as condiments on your table.  A meal like this is filling and only costs about one dollar.
